Super Moist Banana Bread and Refreshing Iced Coffee

Happy Wednesday Y'all!

So the truth is... I don't like making breakfast. I love to eat it, just don't like to make it. I think my love/hate relationship with breakfast is a combination between not being a morning person mixed with having to actually "work" to eat minutes after getting out of bed. Some may call me a Princess... I say so be it if the crown fits!

Because of this, I'm all about the easy breakfasts! We recently shared out Biscuit and Gravy and Breakfast casserole recipes - check them out here if you haven't already! Today I share our go to staple of Banana bread and Iced coffee! Both recipes can be made in less than an hour over the weekend and will leave you with enough PRE-MADE BREAKFAST to last you the entire week. . .which I am all about!




Banana Bread:

Ingredients:

2.5 cups of all purpose flour
2 teaspoons of baking soda
1 teaspoon of salt
1 cup (2 sticks) of unsalted butter, room temp (Microwave for 10 seconds if cold)
2 cups of sugar
6 large bananas
4 eggs
1 teaspoon of vanilla
1 cup of walnuts or pecans or chocolate chips (optional)

Directions:

1. Preheat oven to 350 degrees. Grease 2 loaf pans
2. Using a stand or hand mixer in a large bowl, beat together butter and sugar until well blended (2-4 min on medium high)
3. On medium low speed, add the bananas and mix completely. Then add the eggs and mix again completely. Don't worry if the mixture looks curdled or lumpy-this is only because of the moisture in the mixture. Trust me you didn't mess up!
4. Turn speed to low and add the flour, baking soda, vanilla and salt. Stir until it is just blended
5. Gently fold in the nuts or chocolate chips in by hand *if adding*
6. Divide the batter evenly into 2 greased loaf pans. Bake for 60 minutes. Allow pans to cool for 10 minutes after baking before turning out onto a wire rack to cool completely.

*Wrap in plastic wrap and then foil if freezing. Wrap in plastic wrap or foil if storing on the counter or fridge



Iced Coffee:

Ingredients: 

12 cups of strong brewed coffee- Use your favorite brand
1 14 oz can sweetened condensed milk
3/4 cup of half and half- use more or less depending on how you like your coffee

Directions:

1. Brew 12 cups of Coffee ( I use 16 tbsp of coffee to 12 cups of water.)
2. Place the sweetened condensed milk and half and half into a 1 gallon pitcher that has a lid.
3. Add brewed coffee to mixture. It helps if the coffee is warm/hot while you stir to combine
4. Place in fridge to cool overnight!

Serve over ice and Enjoy!
