Christmas Breakfast Favorites!

For me, some of the fondest memories growing up were those where good food and fellowship were shared!  Being raised by a single mother, the one thing both James and I could always count on was an opportunity to catch up at the end of a long day over dinner.

Because of the importance placed around family meals growing up. Naturally Christmas Morning Breakfast was equally important and just so happened to be filled with some of the BEST recipes!

Today we would like to share some of my families quick southern breakfast traditions with you!




Mama's Breakfast Casserole:

Ingredients:
1-2 bag of frozen shredded hash browns (personal choice on how thick you want the hash brown layer)
1 dozen eggs
1 tube of Bob Evans Breakfast Sausage
1 bag shredded cheese
1 teaspoon of salt
1 teaspoon of pepper

Directions:
1. Preheat oven to 350 degrees and grease 9x13 pan, set aside
2. Cook Breakfast Sausage over medium high heat until fully cooked, set aside.
3. Crack and mix eggs with salt and pepper, set aside. Tip: Adding a splash of milk or water while you are mixing the eggs will make them fluffier!
4. Take 9x13 pan, place frozen shredded hash browns on bottom of pan, followed by cooked sausage then pour mixed eggs on top of sausage and hash browns layers. Top with entire bag of shredded cheese.
5. Cover with Foil and place in over for 50-60 min until brown and bubbly. Remove foil for last 15 min to brown cheese on to.
Note: Feel free to add any sauteed veggies (Onions, garlic, peppers, mushrooms etc)  you may have into the dish, it only makes it better! 



Ma's 20 min Biscuits and Sausage Gravy:

Ingredients:
1 tube Bob Evens Country Sausage (Use Jimmy Dean if Bob Evens isnt available)
1/4 cup all purpose flour
2 cups half and half (Milk can be used as a substitute)
1 teaspoon of salt
1 teaspoon of pepper
1 package of Pilsbury jumbo buttermilk biscuits.

1. Preheat oven according to biscuits directions
2.  Cook Country Sausage in large skillet on medium high heat until done.
3. Leaving the grease and cooked sausage in the skillet, dust 1/4 cup of flour over the skillet making sure that the flour is mixed in. The meat will look slightly grey and sticky because of the flour coating. This is not a mistake! This is goodness in the making folks!
4. Place biscuits in oven
5. Turn heat to medium low, slowly start to mix in 2 cup of half and half adding 1/4 cup at a time until fully incorporated. Its important to continuously sir until you see the milk start to thicken into a gravy.
6. Once the gravy has thickened, add salt and pepper. Turn to low heat and simmer, siring every 3-4 minutes until biscuits are done!
Note: depending on how thick or thin you like your country gravy you may want to alter the recipe slightly. If you want a thinner gravy, add more half and half. If you want a thicker gravy add more flour.
